VEGGIE BRUSCHETTA FOR 1

Ingredients

    ½ tsp olive oil
    ½ tsp balsamic vinegar
    ¼ tsp sea salt
    ¼ tsp freshly ground black pepper
    1 garlic clove, minced
    ¼ tsp dried basil or ¾ tsp fresh basil
    2 tsp Cucumber, unpeeled, chopped
    2 tsp chopped tomato
    2 tsp chopped onion
    1 Pepperidge Farm® 100% Whole Wheat English Muffins_pre-sliced, separated
    2 tsp Black Bean Hummus, divided
    2 tsp crumbled Feta Cheese, divided

Directions

Veggie Bruschetta for 1

PREPARE THE DRESSING:
Stir together
½ tsp olive oil
½ tsp balsamic vinegar
¼ tsp sea salt
¼ tsp freshly ground black pepper
1 garlic clove, minced
¼ tsp dried basil or ¾ tsp fresh basil

COMBINE VEGGIES:
2 tsp Cucumber, unpeeled, chopped
2 tsp chopped tomato
2 tsp chopped onion

Pour dressing over the veggies and stir.
Cover and place in refrigerator. Let sit for about 30 minutes.

SPLIT AND TOAST
1 Pepperidge Farm® 100% Whole Wheat English Muffins_pre-sliced, separated

SPREAD EACH TOASTED HALF WITH;
2 tsp Black Bean Hummus, divided

DIVIDE THE MARINATED VEGGIES BETWEEN EACH MUFFIN HALF

SPRINKLE EACH WITH:
2 tsp crumbled Feta Cheese, divided
