Guilt-free Trifle

Introduction

I made up this lower-fat version of a trifle one day as a Valentine's Day dessert for my hubby. We both loved it so much, it has become a specialty of mine. Ingredients

    Cake base - to be extra healthy, use angel food cake. My favorite base is the reduced fat Entenmann's pound cake. Another good twist is a chocolate bundt cake or banana bread (you can get low fat versions of these as well).

    One container fat free cool whip

    One large box of Jell-O fat free, sugar free pudding mix -any flavor but my favorite to use is vanilla. Lemon is also great.

    1 3/4 cup fat free milk

    1/4-1/2 cup guava juice (use canned guava nectar) - here you can substitute any flavor juice or liquor you like - I often use triple sec or rum or mixtures of juice and liquor.

    reduced sugar jam -any flavor

    2 cups fresh or frozen fruit and berries

Directions

1. Take cake and cut into thick pieces (out of a normal loaf cake I try to get 6-8 pieces). Cut these pieces into halves and briefly soak in juice or liquor mixture. Spread with jam and put the halves back together to form the original thick pieces.
2. Make the pudding according to directions except use no more than 2 cups of fat free milk instead of the 3 recommended. I often use less because I like to add in the juice/liquor mixture for flavoring. If you want to save sugar and calories here, use lemon or orange flavoring and the full 2 cups of milk. Let pudding set.
3. Fold most of the cool whip into the pudding. Keep some aside for garnish.
4. Assemble the trifle in a large glass bowl by first adding a thin layer of pudding on the bottom. Fit in about half of your cake pieces (3-4). Cover with a layer of fruit. Layer with more pudding, cake, fruit. Finish off with a final layer of pudding. Decorate with remaining fruit and cool whip. For an extra treat, you can drizzle the layers with melted chocolate, but I usually leave this out.

Usually this recipe fills up a large glass bowl. I do not eat a whole thick piece of cake myself in each serving so I am estimating this recipe makes 6-10 servings.
