Crockpot Bacon-wrapped Cornish Game Hens

Introduction

Game hens are on sale this week, and I ALWAYS crock on Sundays, but sparkpeople didn't have any crockpot recipes for hens. I got this one from the crockpot lady (crockpot365.blogspot.com) who, I'm sure, won't mind me sparking it for values. YummY! Ingredients

    2 Cornish game hens, thawed
    4 slices of bacon
    1 tsp poultry seasoning
    1 tsp thyme
    1 tsp rosemary
    1 dash salt

Directions

In a small bowl, mix the dry spices. Rub the spice mixture all over the birds, inside and out. Lower the birds into the crockpot, breast side up. Take the strips of bacon and wrap one one way and one the other on each bird. try to tuck an end inside of the cavity.

Cover the crockpot and cook on low for 6-8 hours, or on high for 4-5. I start ours on high the first hour, then switch it to low for the next four to five hours. When they're done the meat will fall off the bones.

Discard the bacon before serving, it doesn't crisp up nicely in the crockpot anyway. If you HAVE to eat it, try microwaving for 15 to 20 seconds to crisp it up. It is already counted in the calories, so why not? (I have to eat it! LOL)

I serve baked potatoes and steamed veggies with the hens. Easily serves four, usually with some leftovers for lunches!
