1 egg 2 egg whites 1 tbsp. water 1/2 tsp salt 1/4 tsp black pepper 1 oz (2 Tbs) low-fat cottage cheese Nonstick cooking spray
Comine egg, egg whites, water, and seasonings in a small bowl; stir well. Coat a medium-size nonstick skillet with nonstick cooking spray; place over medium heat until hot enough to make a drop of water sizzle. Pour egg mixture into pan. As egg mixture starts to cook, gently lift edges of omelet with a spatula and tilt pan to force uncooked portion to flow underneath. When egg mixture is almost set, spoon cottage cheese over half of omelt; continue cooking until egg mixture is set. Loosen omelet with a spatula and fold in half; slide ont serving plate. Serves 2.
