Hearty Whole Grain Waffles

I start with Lehi Roller Mill Whole Grain Heart Healthy Hotcake mix as a base for this recipe. You can use any pancake mix you like. I use Lehi because it is a very wholesome food containing whole wheat flour, whole flaxseed meal, nonfat dry milk, eggwhites, and dry buttermilk. I add old fashioned oats and cold milled flaxseed in this recipe, so even if you use a basic pancake mix, you will end up with a nice whole grain waffle. Ingredients

Lehi Roller Mill Hotcake mix, 2 cups
Cold-milled Flax seed, 8 Tbs, or 4 scoops
Old fashioned oat meal, whole oats, 1 cup
Vegetable oil, 1/4 cup
Water, 2 1/4 cups
Directions
Turn on waffle iron to heat it up to cooking temperature.
In a large mixing bowl, mix all dry ingredients well. Add the water and oil and stir just until the dry ingredients are incorporated. Do not over mix.
Spoon 1/4 cup mix into each quarter of the waffle iron for a standard iron. 1/4 cup mix = one serving. This recipe makes 5 waffles which is 10 servings. Each half waffle (2 quarters) is one serving.
