Number of Servings: 1

Ingredients

    2 slices light bread
1 slice fat free or low fat cheddar or american
    1 sliced whole onion
    1 can sliced mushrooms, drained
1 serving lean turkey bacon(usually about 3 slices)

Directions

Start by cooking the turkey bacon over medium heat in a nonstick skillet. Slice up your onion while it's cooking. When the bacon is about halfway cooked, add your mushrooms and onions to the pan(you may want to spray with some nonstick spray). Continue to cook until the bacon and veggies are done. Transfer the bacon and veggies to a plate. Place your bread in the pan and spray with butter flavored spray(just one spray each). Toast the bread over medium heat until brown. Flip over and place one slice of cheese on one of the bread pieces, then place the bacon and veggies on the other piece of bread. Toast the other side of the bread, spraying as needed, until cheese is melted and bread is golden brown. Put the two sandwich halves together and cut your sandwich in half. Makes one serving.
tip- if you're in a hurry, just toast your bread in a toaster, then put your sandwich together and zap in the microwave to melt the cheese. Just as good!
