Introduction

This hearty soup is super easy to prepare but packed with flavor. Change up the flavor by swapping in your favorite sausage. This hearty soup is super easy to prepare but packed with flavor. Change up the flavor by swapping in your favorite sausage.

Ingredients

    1 medium onion, chopped
    1 large carrot, peeled or scrubbed, chopped
    1 stalk of celery, sliced
    2 large cloves of garlic, minced
    1/2 tsp dried oregano
    1 medium potato, peeled, diced
    2 cups beef or chicken broth
    1 28 oz tin, diced tomatoes
    4-6 oz lean kielbasa sausage, cubed
    1 19oz tin black beans, or your favorite canned beans


Directions

1. Heat large pot with low fat cooking spray. Add onion, carrot and celery; cook and stir over medium heat until vegetables begin to soften.

2. Stir in garlic, oregano, potato, broth and tomatoes; heat to boiling. Stir in Kielbasa. Cover and simmer gently for at least 1/2 hour to blend flavours.

3. Drain and rinse beans. Add to soup. Heat until hot. Add salt and pepper to taste. Serve with crusty bread. (Even better the next day)


** We love this soup. You can prepare it ahead for a gathering and instead of simmering for 1/2 hour, put it in your crockpot on low and add the beans. By the time you are ready to eat (try to make it at least a half an hour) it will be ready to go. Great for potluck as it only gets better the longer it sits.

    Awesome! I left out the potatoes because they raise the glycemic index count. Substituted chicken for keilbasa, added 1 tablespoon of cornstarch mixed in cold water( a slurry)and it thickened great and was fantastic! It will be tommorrows lunch too. - 7/19/09

    I made this a few nights ago and it was AMAZING!!! And it's great that it makes loads of leftovers and they taste even better the next day! I will definitely be making this one again. Thanks for the great recipe!
    Tip: Use more than 1 potato and type of bean & no salt, the kielbasa is salty enough - 10/24/08

    Yum! I doubled the recipe and froze some for later.
    I did it in a crock pot, but had to cook it on high for 3 hrs for the potatoes and carrots to cook thoroughly. - 11/24/08

    I left out the carrot, celery and potato. Doubled the beans, kielbasa, and broth. The tomatoes I added had green chilies in them and I threw in a can of corn. It was awesome and very spicy. Will definetly make again. - 2/22/09

    This was good and flavorful. The recommended cooking times were a little off. Could have let it simmer a lot longer to be sure the potatoes were softer. Might be good over rice too. - 7/14/08

    Wonderful soup! Left out the celery and carrots. Added a can of Rotel tomatoes which gave it enough spice. Also added some fresh corn and used turkey smoked sausage. Hubby and I decided this was a keeper! - 11/9/10

    Im always looking for a new soup recipe. I did change a couple things. I added mexican zuccini, yellow squash, bell peper, and garbanzo and kidney beans to make this hearty soup. Thanks - 12/3/10

    Great soup.... I used 2 cups of broth and add two more cups of water. I did not have celery so I replaced it with cabbage! Great way to make good use of sausages (leftover in my case). Thanks for posting! Will make this again! - 3/22/12

    Added an extra potato since canned black beans usually come in only 15 oz cans. Used a turkey smoked sausage and added chili powder and a bit of crushed red pepper to make up for the zest the kielbasa would offer. The sausage soaked the spices up great! Topped with a dollop of light sour cream. - 11/21/10

    Made this tonight using my slow cooker. I put all but the sausage (used turkey) and beans in cooker. I added them at the last half hour of cooking along with 1 tsp. of cajun seasong. Serve it with a salad and bread sticks. My husband loved it...will make again. - 9/11/10

    Made 'as is' and my husband and I really liked it. Needed a new way to cook both black beans and sausage so this we perfect! Will reduce tomatoes by half next time and add some more spices! Thank you for the recipe! - 2/19/10

    I used dried black beans rather than canned. 4 cups of chicken broth and water. I simmered for several hours to allow the beans to cook and the soup to thicken. I was very good and filling. - 2/26/11

  • Made this for dinner tonight. It was super easy and flavorful. I used twice the amount of tomatoes. Didn't have to add salt since I used canned chicken broth and the keilbasa is already pretty salty. - 5/22/14

  • I guess I'm in the minority here as I thought it would be more flavorful based on the feedback. I think next time I'd add more kielbasa for flavor, and either use a smaller potato or eliminate altogether. and possibly add corn and/or rotel instead of plain tomatoes. It does make A LOT Of soup. - 11/19/13

  • I have made this soup for years and have used different beans..My preference is White Beans.I use smoked sausage which I make and at the end I add spinach which will take about 2 minutes to soften..But heres a trick I let the soup cool down and then strain it thru a fine mesh sieve to remove grease. - 12/31/12

  • Mine was more like a stew. I had andouille sausage that needed using. That made it spicier along with 1/2 tsp. of ground black pepper. Next time I will use more chicken broth, more oregano, and switch to kidney beans. It was quite delicious. Thanks. - 11/17/12

  • I was a bit confused about the "4-6 oz lean kielbasa sausage, cubed" ingredient - I took it to mean four, six oz pieces of kielbasa (24 oz total)? Or does it mean 4 TO 6 oz kielbasa? I think I may have used too much.... - 10/2/12

    Have to say I really enjoyed this. I modified it a bit...added more beans (less soupy), did not use carrots or celery or oregano but added corn and chili to make it more southwestern.     Cooked in this in crock pot high for 4 hours. Added bag of frozen corn, turnip, 2 red potatoes w/skin, basil, red pepper flakes, cayenne pepper, red kidney beans, turkey kielbasa to cut the fat. Turned out wonderful, froze a bunch for later eating! - 10/17/11

  • This is by far one of my most favorite soups of all times. I have been making it for over a year and I make it year around. I do add a can & 1/2 of Green Gian's Nibblet Corn, I use beef kielbasa. Seasoned tomatoes No potato at all. I also have to cook it in the slow cooker to get proper tenderness! - 9/19/11

  • This soup is awesome. I made it today for lunch. I used turkey kielbasa and a 14.5 oz can of tomatoes because that was all I had. I added chilli powder and red pepper flakes along with the oregano like another reviewer . This is a keeper. I will make this again and again. Thanks for the recipe. - 4/11/11

  • I added cayenne pepper for some kick and thought it made the soup better. I also added more of the sausage b/c my package was about triple the amount called for and my husband likes meat, so I just did the whole package. Picky hubby only ate the sausage - grrrrrr! - 4/5/11

  • I tried this soup tonight. I added 1/4 tsp chili pepper flakes, added one carrot and used one large potato instead of one medium. Both DH and I like the overall taste but we both agreed that it would be better if an italiene sausage would be used instead of the kolbassa. Will likely make again. - 1/11/11
