Cranberry Apple bake

Introduction

I made this when I was craving apple pie. It would go great alongside oatmeal, or as a topping for whole wheat pancakes. This only makes one serving, but it can easily be quadrupled for brunch parties, etc. And it's a pretty color too! It seems a little high in fat and cals. but that's from the heart healthy walnuts. Number of Servings: 1

Ingredients

    1 medium apple
    1/4 c. diet cranberry juice
    1 T. brown sugar
    1 T. chopped walnuts
    1 squirt of fat free whipped topping
    1/2 tsp. cinnamon

Directions

Core your apple, and leave it whole, or cut into slices ( i have the tool that cores and slices in one step, so i just used that). Place slices in a baking pan. Pour the juice over the apples, then sprinkle with brown sugar and cinnamon. Bake in a 350 degree oven for about 10-15 mins. or until desired tenderness. Take apples out of the pan and place in a bowl, then pour the warm juice from the pan over the apples. Top with walnuts and whipped topping.
