Soft Oatmeal-Raisin Squares



Introduction

Kind of a hybrid between bread and bars. Very nutritious and filling, but surprisingly low-cal!

Good for breakfast, a snack, or dessert. You can add other fruits to this if you like... replace the raisins with other dried fruits, or add bananas, apples, or pears! Really, you can make this to your own tastes!

Number of Servings: 9

Ingredients

    1.5 Cups Quaker 1-Minute Oats
    3/4 cup skim milk
    1 small 1.5 oz box of raisins
    8oz unsweetened apple sauce
    3 tbsp Splenda
    1/4 tsp vanilla extract
    1 tsp cinnamon
    2 tsp baking powder

Directions

Grease a 9x9 glass dish and set aside.


Preheat oven to 350 degrees F.


Mix all ingredients together. This will look very soupy. Let it sit for 5 minutes so the oats can soak up some of the milk. Stir again and pour into greased dish.


Bake at 350 for 35 minutes or until golden and knife inserted in center comes out clean.


You NEED to let these cool completely (at least 10 minutes) so they are easily removed from the dish. They're sticky on the bottom and will not release if still warm (unless you want them to fall apart or plan to eat it with a spoon)! They still kind of stick to the bottom, but that's because they're SOFT squares, not cookies!


Cut into 9 squares, and enjoy!


Serving suggestions: Top with honey; serve with fruit or apple sauce; top with caramel sauce; top with fat free whipped topping; it's really endless!
