Irish Breakfast Scramble

Introduction

This is relatively quick to make and provides a well balanced meal in a single skillet.

Number of Servings: 4

Ingredients

    4 large eggs (I use brown)
    2 oz Muenster Cheese
    4 slices Turkey Bacon
    2 cup Idaho Potato (sliced)
    1/2 cup Mushrooms (sliced)
    1/3 cup Green Pepper (chopped)
    1/4 cup Onion (chopped)
    1 tbsp Black Pepper
    1 tbsp Canola/Olive Oil Blend

Directions

1. In a small bowl, scramble eggs, mix in shredded cheese and pepper and set aside.

2. In large skillet cook bacon til crisp, set aside. Combine Oil and potato and cook til potato is golden.

3. Combine Mushroom, green pepper and onion with the potato, cook til done.

4. Finally combine egg mixture with potato mixture, mix together, add bacon and cook til egg is done, stirring constantly.
