If you like zucchini you will love this recipe. Even my children eat it up and they do not usually eat zucchini. This a great year round recipe. Ingredients

    1 Lrg Onion Finely Chopped
    1/2 Cup Veg Oil
    1/2 Cup Grated Parmesian Cheese
    4 Eggs Beaten
    1 Tbl. Parsley
    3 Cups Shredded Zucchini
    1 Cup Bisquick
    1 Cup Shredded Cheddar Cheese

Directions

Combine in a large bowl; onion, oil, parmesian cheese, eggs, and parsley. Mix well. Add to this zuucchini, bisquick, and cheddar cheese. Mix together. Bake at 350 degrees for 35 minutes. This will make 2 pies or one Lrg (11 inch) round cake pan. Cooking time may be longer in Lrg cake pan.
