Number of Servings: 6

Ingredients

    1 onion
    1 clove garlic
    1 lb. carrots, peeled and grated or put into a food processor
    4 Tblsp butter (hold sodium level down with margarine or unsalted butter or hold down fat with Spectrum margarine) - Calculations are with salted butter as we like the flavor.
    4 Tblsp nutmeg
    Salt and pepper to taste
    1 large potato, diced
    Chopped chives
    6 cups chicken broth (low sodium)

Directions

Melt butter, saute garlic, onion and carrots.

Add broth, seasoning, potatoes, and simmer soup.

Puree soup (in a blender or food processor) - and reheat to serve.
