sunset orzo with shrimp

Number of Servings: 6

Ingredients

    1/2 lb orzo
    2 pinches saffron threads
    1 cup chicken or beggie broth
    3 tbsp olive oil
    1/3 chorizo chopped
    1 onion, chopped
    1 small red bell pepper chopped
    2 cloves garlic, choppped
    1 tsp ground turmeric
    1/3cup green peas
    1 lb medium shrimp
    1/4 c chopped parsley
    1 tsp paprika
    juice of 1/2 lemon

Directions

1. bring a large pot of water to a boil, salt it, add the orzo and cook until al dente. drain and cover.
2. while pasta is cooking, steep teh saffron in the broth over low heat.
3. in a med. skillet, heat 1 tbsp oil, over med heat.
Add the chorizo and cook until browned, 2 min. Add the onion, pepper, garlic and turmeric and cook for 5 min. Stil in the peas.
4. in another med. skillet, heat the remaining 2 tbsp oil over med. heat. Add shrimp adn cook until pink and firm, 2 to 3 min. Stoir in the parsley, paprika and lemon juice; season with salt. Remove from heat.
5. pour the broth over the chorizo and vegetables. Add the orzo and toss fro 2 minuts.
Top the orzo with the shrimp.
