Introduction

A great chicken dinner recipe I got from allrecipes.com. Great blend of flavors with the creamy wine sauce and sun-dried tomatoes. A new favorite to make for company. Ingredients

    1 c. all purpose flour
    4 boneless, skinless chicken breast halves
    salt and pepper to taste
    2 TBSP butter
    1/2 c. dry white wine
    1/2 c. fat free chicken broth
    1 TBSP dijon mustard
    1 zucchini cut lengthwise and diagonally
    5 sun-dried tomatoes, chopped
    1 clove garlic
    1 tsp dill weed
    1/3 c. fat free sour cream

Directions

Place flour in shallow dish. Season chicken w/ salt and pepper. Dredge in flour, shaking off excess. Heat butter in large skillet. Brown chicken breasts on each side. Approx. 3 min. per side

Pour the chicken broth, white wine into skillet. Scrape any chicken residue from the pan. Stir in mustard. Cover and cook for a few minutes, but not cooked through. Add the zucchini and sun-dried tomatoes, then season w/ garlic and dill weed. Cover and cook until the zucchini is tender and the chicken is cooked through - about 5-10 minutes.

Remove the chicken to a platter and remove pan from heat. Stir in sour cream into the pan liquid. If most of the liquid has evaporated, stir in a bit more wine or broth first. Serve chicken w/ sauce poured over it.
