Rissole, Bacon and Tomato Casserole

Introduction

Ingredients

    600gms ground beef mince
    1 small brown onion, chopped finely
    1 egg
    1/2 cup (100gms) basmati rice
    1/4 cup (15gms) stale wholegrain breadcrumbs
    2 tsps Worcestershire Sauce
    4 rindless bacon rashers, chopped finely
    400gms can chopped tomatoes
    1/2 cup (125mls) beef stock
    2 tbsps tomato paste (or passata)
    1/2 cup coarsely chopped fresh basil

Directions

1. Preheat oven to 200C (180C fan-forced oven).
2. Combine mince, onion, egg, rice, breadcrumbs and Worcestershire sauce in a large bowl. Shape mixture into 12 rissoles. Place in a deep 2-litre ovenproof dish.
3. Sprinkle the bacon over the rissoles. Pour over the combined tomatoes, stock and tomato paste.
4. Bake casserole, covered, for 1 hour or until rissoles are cooked through and rise is tender. Stir in basil before serving.
