Simple Fish Bake

Introduction

Ingredients

    zucchini
    onion and garlic
    1/2 can unsalted tomato, diced
    herbs of your choice (fresh basil tastes great)

Directions

PREHEAT oven to 400°F.

MIX zucchini, onion, garlic and tomatoes in 9-inch square baking dish; top with fish.

BAKE 15 minutes; sprinkle with cheese (optional). Bake an additional 8 to 12 minutes or until fish flakes easily with fork. Serve with lemon wedges.
