Number of Servings: 4

Ingredients

    1 c quick-cooking oats
    1/2 c all-purpose flour
    1/2 c whole wheat flour
    1 tbsp sugar
    1 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp salt
    1 egg, lightly beaten
    2 c buttermilk
    2 tbsp canola oil
    1 tsp vanilla extract
    Assorted berries, optional

Directions

One serving = 3 pancakes calculated w/o berries

In a bowl, combine the first seven ingredients. In another bowl, combine the egg, buttermilk, oil, and vanilla; mix well. Stir into the dry ingredients just until moistened. Pour batter by 1/4 cupfuls onto a hot griddle coated with cooking spray. Turn when bubbles form on top; cook until the second side is golden brown. Serve topped with berries if desired.
