Sausage Lentil Throw-together

Introduction

Had lots of beans and didn't know what to do with them; so this became! Had lots of beans and didn't know what to do with them; so this became!
Number of Servings: 10

Ingredients

    1 1/2 c lentils
    1 lb of pork sausage
    1 can rotel (diced tomatoes w/ chilies)
    2 tsp minced garlic
    1 tsp garlic salt
    2 tbsp salt
    1 tbsp dried, minced parsley
    1 c shredded mozarella cheese

Directions

Brown, drain and rinse sausage. Cover lentils with water. Add the seasonings and boil for approx 20 minutes. Drain off most of the liquid. Mix all of the ingredients, except the cheese, in a casserole dish coated with cooking spray. Sprinkle cheese over the top and bake at 350 until cheese is melted.
