Ingredients

Gnocci
* Spinach, fresh, 1 package (10 oz) (remove)
* Egg, fresh, 3 large (remove)
* Parmesan Cheese, grated, 1 cup (remove)
* Ricotta Cheese, part skim milk, .5 cup (remove)
* Bread, wheat (including toast), 1 slice (remove)
* Basil, 2 tbsp (remove)
* Scallions, raw, .33 cup, chopped (remove)
* Garlic, 3 cloves (remove)
* Pepper, black, .5 tsp (remove)
* Salt, .5 tsp (remove)
* Nutmeg, ground, .25 tsp (remove)
Sauce
* Olive Oil, 1 1tsp (remove)
* Onions, raw, 1 cup, chopped (remove)
* Garlic, 3 cloves (remove)
* Salt, .5 tsp (remove)
* Canned Tomatoes, 3 cup (remove)
* Pepper, black, .25 tsp (remove)
Directions
make sauce: sautee onions, garlic and salt until golden. Add tomatoes, and their juice, pepper and simmer 10 - 15 min.
Cook spinach until leaves wilt. set aside to drain.
In large bowl, beat eggs, mix in cheeses, bread crumbs, and all other ingredients (except sauce!) When spianch has cooled enough to handle, squeeze excess water and chop. Stir into cheese mix. Drop batter by rounded T. into oiled baking dish to make about 18 balls. Pour the sauce around gnocchi to almost cover. Bake 25 min. until firm and beginning to brown.
