Savory and Sweet Chicken

Introduction

Number of Servings: 2

Ingredients

    1 boneless, skinless chicken breast (1/2 breast=1 serving)
    Salt and Pepper to taste
    Thyme (to taste, about 2 tbsp)
    1 clove garlic, finely chopped
    2 tbsp olive oil
    2 tbsp honey
    2 tbsp lemon juice

Directions

-Rub salt, pepper, and thyme on chicken breast.
-Cook chicken and garlic in olive oil
-When chicken is just about done cooking, remove from skillet and place in warm oven (chicken will finish cooking in oven)
-With remaining juices and garlic in skillet, add lemon juice and honey. Whisk together.
-Add chicken back to skillet to coat
-Enjoy!

Note: I served this with brown rice, and the lemon/honey sauce spiced up the flavor.

Makes 2, 0.5 breast servings.
