Mexican-style Tuna and Avocado Salad

Introduction

Easy, quick lunch that I whip up at least once a week. If you're adverse to onions or spicy peppers, you can leave them out and it's still delicious! Easy, quick lunch that I whip up at least once a week. If you're adverse to onions or spicy peppers, you can leave them out and it's still delicious!

Ingredients

    1/2 avocado, diced
    1 plum tomato, diced
    1/4 cup onion, diced (optional)
    1 pickled jalapeno pepper, chopped (optional)
    1 Tablespoon cilantro, finely chopped
    1 lime, juiced
    1 teaspoon extra-virgin olive oil
    1 (5-oz) can solid-white albacore tuna in water, drained
    salt and pepper to taste

    3 cups romaine lettuce, washed and roughly chopped
    1/2 cup red cabbage, finely chopped (optional)

Directions

In a medium bowl, combine prepared avocado, tomato, onion, jalapeno, and cilantro. Add in the lime juice and olive oil. Stir gently until evenly combined. Flake the tuna in the can with a fork and add to avocado salad mixture. Stir one more time. Add salt and pepper to taste.

Divide lettuce between two bowls. Top with tuna-avocado salad. Sprinkle on red cabbage if desired. Enjoy!
