Introduction

Ingredients

    4 Tbl. olive oil, 1 small onion, chopped, 2 cloves garlic, chopped, 14 oz. fresh mushrooms, sliced, 10 oz. package spinach, roughly chopped, 2 Tbl. balsamic vinegar, 1/2C white wine, salt & pepper to taste.

Directions

heat oil in large skillet over med. heat. Saute onion and garlic until they become tender. Add mushrooms and fry until they start to wilt. Toss in spinach and fry, stirring constantly for a few minutes until spinach is wilted. Add vinegar and stir constantly until absorbed. Stir in wine and lower heat to low. Simmer until wine is almost gone. Add salt & pepper to taste.
