Whidbey Island is in Puget Sound about 35 miles north of Seattle. Pacific Northwest fare is similar, but here is a traditional island dish sure to keep your weight in check and your tastebuds asking for more. Serve with a Riesling wine. Ingredients

18 - 20 large, raw shrimp, shelled and deveined
2 Tblsp olive oil
2 Tblsp butter
2 cloves garlic, minced
dash Italian seasoning
2 Tblsp chopped parsley
2 Tblsp seasoned dry bread crumbs (NOTE: I make my own from left over bread - usually whole wheat so I am including nutritional calcluations here for 2 slices whole wheat bread, crumbed in food processor)
2 Tblsp grated Parmesan cheese
8 oz. speghetti
1 glass Riesling wine
Directions
Clean shrimp and store in refrigerator until just before serving.
Heat oil in a large heavy ovenproof skillet; add butter, garlic and Italian seasoning. Add shrimp and saute until almost done, about 3 minutes.
Sprinkle shrimp with parsley, bread crumbs and cheese. Place scampi under broiler for 30 seconnds, just long enough for cheese to bubble slightly.
Serve immediately. (over rice or speghetti - nutritional information is for speghetti). OR eat alone with a salad. This dish prompts the chef's creativity!
