Self blueberry/orange muffin



Introduction

I found this recipe in SELF magazine (FEB 2009) and made a few changes. I found this recipe in SELF magazine (FEB 2009) and made a few changes.
Number of Servings: 11

Ingredients

    1 medium egg
    2 tbsp lowfat plain yogurt
    2 tbsp buttermilk
    1/2 cup oat bran
    1 1/3 cup whole wheat flour
    3/4 tsp baking soda
    3/4 tsp baking powder
    dash of salt
    3 medium bananas mashed
    2 tbsp brown sugar
    1/2 cup fresh blueberries
    zest of one orange (optional)

Directions

Makes 11 big muffins (could make smaller but the nutrition facts are for 11)

~Heat oven to 375.
~Whisk egg, yogurt and buttermilk in bowl.
~In another bowl, mix oat bran, flour, baking soda, baking powder and salt.
~In third bowl, mash bananas and sugar. Add egg mix to this bowl, And slowly add flour mix. Fold in blueberries and zest.
~Fill muffin tins with batter.
~Bake 15-20 minutes.
