Introduction

Ingredients

    2 medium to large eggs
    Green or Red Peppers (bell peppers), 1/4 cup
    Garlic, 1 clove, chopped fine
    Onions, raw, 4 tbsp diced
    Mushrooms, fresh, 2 large, chopped
    Olive Oil, 1 tbsp
    Spinach, fresh, 1/2 cup
    Pinch of Parsley
    Pinch of Cayenne
    Sea Salt to taste
    Garlic & Herb Seasoning - Pinch

Directions

Chopped/diced veggies: Bell pepper, onion, garlic, mushrooms and spinach. You don't need to chop the spinach.

~~Clean mushrooms with a damp cloth. DO NOT run under water, this will make the mushrooms tough.

**You can use any veggies you like and/or add more

In a bowl, add the 2 eggs - beat them with a whisk.

In a skillet, add olive oil. Then add your veggies.

Cook until tender. Then add your beaten eggs. Cook until desire texture.

Add to plate and garnish with parsley.

Olive oil gets hot fast. You want a sizzle when adding veggies, but don't have smoke coming from your pan. Olive oil will burn, making veggies nasty and tough.
