Butternut Squash Soup

Introduction

This is a delicious creamy soup that is very satisfying yet very low in calories. Everyone raves about this when I make it. This is a delicious creamy soup that is very satisfying yet very low in calories. Everyone raves about this when I make it.
Number of Servings: 12

Ingredients

    6 cups Hot water
    2 cups chopped onions
    2 minced garlic cloves
    3 cups peeled butternut squash cut into 2" chunks
    salt and pepper to taste
    1/4 cup raisins
    3 cored and diced apples - leave the skins on
    2 T. honey
    DASH of cayenne pepper
    1 tsp. curry powder
    1 tsp. nutmeg
    1 cup sliced fresh mushrooms

Directions

Makes 12 servings. In a soup pot, saute onions and garlic. Add squash and water and boil 20 minutes or until squash is soft. Add salt and pepper. Puree 1/3 of the squash/onion mixture in a blender or food processor and add back to the pot and mix. Add raisins, apples, honey, cayenne pepper, curry powder, nutmeg and mushrooms. Cook 30 min. longer. If too thick, add water and stir. Enjoy!
