Simple Sausage and Rice Skillet

Introduction

The sweetness of the green peppers is a great compliment to the mild spice of the sausage. No additional seasonings are needed making this a quick, simple meal.

This is an easy dish to add your own flair to, just keep in mind additions will change the nutrition content. Also, brown rice can be substituted for the white rice. Ground turkey or beef can be substituted for pork, however remember that the seasoning from the dish comes from the already seasoned pork.

Ingredients

    1 lb medium spice ground pork sausage
    1 green pepper, diced
    1 can diced tomatoes
    1 cup rice (note: do not use minute rice, and adjust water amount if instructions call for something different)
    2 cups water

Directions

Brown the pork in a skillet on med heat, drain any grease. Once it is browned add all other ingredients. Cover and cook based on the instructions for the rice. If the rice doesn't cook all the way through you can add a little more water and cook a few minutes longer.

Be careful that the rice doesn't cook to the bottom, make sure to stir a few times during cooking.
