Sweet Potato & Seafood Bisque

Introduction

I absolutely love this soup, hot or cold. You can enjoy it as a soup or thicken it up with more potatoes or seafood. I have a girlfriend that adds scallops!

I absolutely love this soup, hot or cold. You can enjoy it as a soup or thicken it up with more potatoes or seafood. I have a girlfriend that adds scallops!

Number of Servings: 6

Ingredients

    1 pound shrimp (peeled and steamed, seasoned to taste)

    1 can of Blue Crab meat (or fresh crab meat)

    1 32 oz. box of Pacific Natural Foods Organic Creamy Butternut Squash Soup

    1 Sweet Potato Baked and Peeled

    1 Onion Diced

    1 tbsp Olive Oil

    Seasonings:
    Old Bay
    Garlic
    Salt & Pepper

Directions

In saucepan or small pot saute onions in olive oil and salt and pepper to taste. Peel sweet potato, diced or mash into sauted onions to gather flavor. Pour in Butternut Squash Soup and let simmer for 5-minutes. Add Steamed and Seasoned Shrimp along with Crab meat and turn down the heat, let simmer for 10 minutes.

Can make 4 large servings or 6 smaller servings served over rice or pasta.
