1 lb. chicken breast, cubed
1 c. brown rice, uncooked
10-16 oz. frozen broccoli
2 c. water
1 t. salt
1 T. butter
2 1/2 c. milk
4 T. flour
4 T. butter
1 1/2 c. shredded cheddar cheese
While that is cooking, make the cheese sauce by melting the butter in a small pot. Add 2 c. of milk when melted. Mix the reserved 1/2 c. milk with the flour. When milk begins to simmer, add the milk/flour mixture and stir in until it thickens. Add cheddar cheese, stir until melted and smooth.
When the chicken/rice is done, pour the cheese sauce over it and mix well. Enjoy!
