Introduction

Number of Servings: 10

Ingredients

    6 cups cherry tomatoes
    2 Tbsp. Olive oil
    1 tsp salt
    1 tsp pepper
    1 Tbsp. unsalted butter
    3 Garlic cloves, minced
    1 cup chopped onion
    1 can (28oz) diced tomatoes
    4 cups chicken broth
    0.5 tsp thyme

Directions

Heat your oven to 400 F. On a baking sheet combine the cherry tomatoes, 1 tbsp olive oil, salt and pepper. Toss to coa evenly and spread in a single layer. Roast the tomatoes until they are shriveled with brown spots (approx 35 mins).

In a large pot heat the butter and remaining tbsp. olive oil over medium heat. Add the garlic and onion and saute until softened. Add the canned tomatoes with their juice, the broth, thyme and the roasted tomatoes, including any juices on the baking sheet. Bring the mixture to a boil, then reduce the heat an simmer partially covered for 40 mins.

Using a food processor blend the soup until it is smooth.

Makes 10 one cup servings.
