Cinnamon-Oatmeal Muffins

Introduction

Number of Servings: 12

Ingredients

    1.5C Whole Wheat Flour
    3 t Baking Powder
    1/4 t salt
    3/4C Quick Cooking Oats, uncooked
    2/3C Brown Sugar (I use Splenda)
    1 T Cinnamon, ground
    3/4C Skim Milk
    1/4C Unsweetened Applesauce
    1.5T Vegetable Oil
    3 Egg Whites
    Nonstick cooking spray for muffin tins

Directions

1. Combine first 6 ingredients in a medium bowl; make a well in center of mixture.

2. Combine milk, applesauce, oil and egg white; add to dry ingredients, stirring just until dry ingredients are moistened.

3. Spoon batter into 12 muffin pan cups coated with cooking spray, filling each three-fourths full.

4. Bake at 400ยบ F for 15 to 18 minutes or until golden. Remove from pan immediately.
