Chicken, Spinach & Ricotta Quesadillas

Number of Servings: 8

Ingredients

    4 oz boneless, skinless chicken breast, chopped
    1 tsp olive oil
    1/2 cup chopped onion
    1 cup chopped red & green peppers
    75 grams chopped, frozen spinach
    1/3 cup part skim ricotta cheese
    75 grams low fat cheddar, shredded
    1 tsp lemon juice
    pinch nutmeg
    pinch sea salt
    pinch black pepper
    4 whole grain tortillas

Directions

In fry pan, heat oil and cook chicken. Then add onion, pappers and spinach. Cook until onion is tender. Set aside and allow to cool.
Mix remaining ingredients (except tortillas) together in a bowl.
On a parchment lined cookie sheet, plave two tortillas. Divide and spread the chicken mixture onto the tortillas. Do the same with the cheese mixture and top with remaining tortillas.
Bake @ 350 for 20-25 minutes. Allow to sit for 2-3 minutes after removing from oven, then cut into quarters.
Makes 8 wedges.
