4 oz boneless, skinless chicken breast, chopped
1 tsp olive oil
1/2 cup chopped onion
1 cup chopped red & green peppers
75 grams chopped, frozen spinach
1/3 cup part skim ricotta cheese
75 grams low fat cheddar, shredded
1 tsp lemon juice
pinch sea salt
pinch black pepper
4 whole grain tortillas
Mix remaining ingredients (except tortillas) together in a bowl.
On a parchment lined cookie sheet, plave two tortillas. Divide and spread the chicken mixture onto the tortillas. Do the same with the cheese mixture and top with remaining tortillas.
Bake @ 350 for 20-25 minutes. Allow to sit for 2-3 minutes after removing from oven, then cut into quarters.
Makes 8 wedges.
