Easter Cheesecake! (Low-carb)

Introduction

Since I can't have hot cross buns, I have made a cheesecake which evokes a similar sensation of spices and luxury! Since I can't have hot cross buns, I have made a cheesecake which evokes a similar sensation of spices and luxury!
Number of Servings: 8

Ingredients

    Base:

    1 cup almond flour

    1/2 cup soy protein

    4 tsp Sucralose

    6 T butter (or 2 T butter, 4 T coconut oil)

    Up to 1 T spices (I use cinnamon and nutmeg)


    Cheesecake:

    250g Philadelphia cream cheese

    2 T smooth ricotta

    1/2 cup cream

    Gelatin (to make 1 cup mixed with water)

    1/2 cup hot water

    1/2 cup cold water

    1 tsp vanilla essence

    1 tsp spices (cinnamon)

Directions

Base:


Combine the crust ingredients well, and press into spring-form pan. Bake for 5 minutes at 200 degrees Celsius. Cool completely before adding filling.


Fillings:


Melt cream cheese in microwave until soft (10 second increments). Beat together with cream and ricotta until smooth.


Make gelatin with hot water, adding cold water after gelatin crystals are fully dissolved. Add to cream cheese mixture and beat well.


Pour over base, and set in fridge. You could top with fruit or an Easter cross with melted dark chocolate.


Serves 8 (3g net carb for base, 5.5g cheesecake - 8.5g per slice)
