Country Potatoes

Introduction

Comfort food, delicious with any dish you'd serve potatoes with. Comfort food, delicious with any dish you'd serve potatoes with.
Number of Servings: 12

Ingredients

    2 lb. bag frozen hash brown style potatoes, thawed
    1 can 98% fat free cream of chicken soup
    1 pint reduced fat sour cream
    1 cup extra sharp cheddar cheese, shredded
    1 cup 50% reduced fat cheddar cheese, shredded
    Salt and pepper to taste

Directions

Preheat oven to 400. Spray a 9 x 13 pan with cooking spray.

Put thawed hash browns in a large bowl. In another bowl, mix together cream of chicken soup, sour cream and cheese. Pour over hash browns and mix well. Put mixture into pan and cover with foil.

Bake for 45 minutes; remove foil and bake for an additional 15 minutes until bubbly and golden on top.

Makes 12 servings, approximately 3/4 cup/serving.

    This was really good!! I had to use regular cheddar cheese and regular sour cream, it doubled the calories!!! So stick to the recipe and save the calories for a little evening snack! - 4/14/09

    I tried this recipe for the first time and served it as part of Easter dinner (18 at the table)...everyone loved it. I didn't use reduce fat items...I used what was in my house...it was fantastic. - 4/12/09

  • Going to make this next week. I will ass hamburger, onions and fresh mushrooms. I will cook the hamburger first and saute the mushrooms,ans oniions, That will make an easy meal. Thanks Vi - 10/26/09

  • This sounds so good! We love casseroles to I think I will change the soup to cream of mushroom and add diced 94% fat free diced ham. Fresh green beans or a salad and we will have a complete meal! Thanks! - 4/17/09
