Marinated overnight in small can crushed pineapple, soy sauce, salt, lemon juice, & Johnny's "Jamaica Me Crazy" spice. Sauteed one onion finely chopped, before chicken. My son added soy sauce. We loved it.
I've made this several times and each time I tweak it a little to my own preferences, which everyone here who has left such negative comments can do too! I think the recipe as is was good too! Sometimes we want less sweet and more heat, other times the opposite...loved it!
This was amazing! After reading everyone's reviews, I seasoned the chicken with cayenne pepper, garlic salt, and pepper. I used a red bell pepper for color, and a plantain instead of a banana, no almonds. The dish was beautiful and it was a perfect pairing of sweet and spicy. Thanks for sharing!
Me and my boys really liked this. I used fresh garlic and ground ginger instead of the powders. Sauteed one small onion before adding the chicken, then added celery, green onions and cilantro. Very tasty!
This was a hit at my house and will definitely become a regular on the menu!! The only thing I have to question is the accuracy of the nutritional info. The info is based on 6 servings w/4 oz of chicken, which would be 24 oz., however, the recipe only calls for 1 lb of chicken, which is only 16 oz
Substituted agave for the brown sugar, used fresh pineapple, garlic and ginger, chopped in a jalapeno pepper, sliced in a whole banana for a half recipe and added low sodium lemon soy sauce. The banana made this really yummy.
I bought all the ingredients to make a half order of this for my husband and I. But my husband started complaining that he doesnt like fruit in his dinner. So I said fine, I'll cook it and take it for lunches. So I did & he couldnt keep his fingers out of the pan. I'll definitely make it again!
This is yummy! Will definitely make again. I added garlic pepper salt on top, as I thought it needed something and I love that seasoning on everything haha. I like banana but for some reason I thought I would try it w/o next time. (Other person here loved it though.)
Loved it! Loved having the banana too for a little extra flavor. I batch cook though, so I might leave it out in the future because I don't think it will keep and reheat well. But YUM for the recipe and easy and quick too!
My daughter and I made this dish a few nights ago. We both liked it pretty well. Next time i think i'll leave out the bananas and maybe only about half the pineapple. It took me an hour to make this (not 20 min) It heated up nice for 2nds.
It is not very many times that I like a recipe the first time that I make it. The only thing I would change is to mariate the chicken. This is good as a left over. Now that there are just two of us in the house, I pay attention to that.
Very good!! Re the blandness, remember chicken breast IS bland. We never use it, despite it's lower fat content--why not eat something that tastes good? We always use chicken thighs--skinless for BBQ, boneless & skinless for other recipes, cutting off all visible fat. Try boneless pork loin, too!!
Added jerk seasoning (with little heat) and Tony Chachere's for heat and enough salt to balance the flavors. Will make again, probably marinating the chicken in the juice, some of the vinegar and the jerk for a while ahead of time. Oh, used raspberry wine vinegar.
This was a very interesting combination. My Cajun husband even said he'd eat it again. Next time I'm gonna marinate the chicken in some seasonings over night. Think it still needs a cajun kick.
I did everything like you said but I substituted Mango and papaya cubes for the banana it took away some ot the sweetness of the meat. Plus I added the cayenne pepper like was suggested by one reader. I liked it
Chicken is kind of bland and could use more spices, but that might be my preference. All the ingredients are my b/fs faves so he said it was a win. The next day the banana does not look too good....
My family liked this recipe. Banana and pineapple tasted good in it. Worth the effort. I thought it was a bit bland, maybe a little thicker and more citrus-y. Would make again -my 14 yr. old ate it!!
This was a huge hit at my house! I left out the almonds but we are going to add them the next time we cook it. We ate it with brown rice the first time but I think we'll try it as a filling for lettuce wraps next time! The banana was always fun to bite into!
I enjoyed it,next time I would add more flavorings to the chicken as it sautes.I have left over,so I may add less banana next time and eat all the banana the first night.loved the mix of pineapple & banana!
Not bad, but aside from the overwhelming sweetness of the pineapple and the occasional bit of flavor from the banana, it didn't really have much flavor. To be fair, neither my husband or I like sweet dinners. If you do, this could be the perfect recipe for you.
Awsome chicken recipe! Especially for a 20 min. deal. It's hard to find enough recipes to keep chicken interesting, and even harder if you eat chicken almost every single day. Sometimes even twice per day. A little chili powder or jalapenos makes for an interesting twist on this recipe too.
This was really tasty! Substituted in fresh garlic, jalapeno, fresh ginger, and instead of cider vinegar, I used rice wine vinegar. I added a lot of fresh ginger and garlic. Next time, I will add another jalapeno for more kick.
It wasn't bad, but it wasn't a favorite either. The chicken didn't have much flavor - it was kind of bland. I left out the bananas and almonds while cooking and added them at the table. The kids didn't care for it. I probably won't make it again.
I don't know if I did something wrong or what happened, but I didn' tlike this. My husband ate it, but I didn't think it tasted very good. Maybe next time I will try something different with it.
MADE THIS FOR DINNER TONIGHT:) IT WAS EASY TO MAKE AND FLAVORFUL. I USED 20 OZ. OF CRUSHED PINEAPPLE, 2 BANANAS, NO GREEN PEPPERS AND USED WHOLE WHEAT EGG NOODLES (OUT OF RICE). NEXT TIME I WOULD USE FRESH GARLIC AND FRESH GINGER FOR A LITTLE MORE ZIP. SMELLES AND LOOKS YUMMY. THANKS FOR SHARING
Instead of bananas use green plantains instead. They're not as sweet and will add a nice flavor. If planning on using plantains, they are a bit tricky to peel. The skin is very tough - take a small knife and slice the peel from top to bottom and remove the skin from around the plantain.
My husband usually would say this is too much fruit for his dinner... But he really enjoyed it. As with most recipes, I add my own spices - I used fresh garlic and then added some crushed red pepper and sage for the chicken. My little one ate it up.
This was really good. I'm looking forward to trying it again and adding some additional spice to give it a little more flavor. I didn't have almonds so I substituted a few macadamia nuts and it went well with the other flavors.
