Sweet and tangy Apricot Chicken

Ingredients

    750 g chicken thigh fillets cut into 5 cm chunks
    plain flour for dusting
    2 tbsp extra light olive oil
    2 tsp red curry paste
    2 large shallots, sliced on diagonal
    415g can apricot halves in their own juice
    1/2 cup low fat liquid chicken stock
    200g plain low fat greek yoghurt
    2 tbsp chopped fresh coriander leaves
    Fresh coriander leaves to garnish

Directions

1. Lightly coat the chicken on the flour. Heat oil in a medium -large saucepan on low heat, add the curry paste and stir for 1 min. Add the shallots and chicken and cook, stirring over medium heat for 2-3 mins, or until outside of chicken is golden brown.
2. Reserving 1/2 cup of the apricot juice, drain the apricots. Add the reserved juice and apricots, and the chicken stock to the pan. Bring to the boil, then reduce heat and simmer for 10 mins, or until chicken is cooked and tender.
3. Once cooked place a serving of chicken onto each plate
4. Mix together the yoghurt and coriander and place a spoonful of the mixture over each serving of chicken
5. Garnish with the extra coriander leaves

NOTE can be served with rice or couscous
