Few of us have time to make one meal, let alone three. Here is a quick, easy and efficient way to make three meals out of one. Nutritional calculations are for all ingredients for all three meals. Nutritional calculations are for all ingredients for all three meals. This is a grab and cook meal!
Number of Servings: 14

Ingredients

    3 eggs beaten
    1 1/4 cups 1% milk
    1 cup dry bread crumbs or 4 slices bread, torn into small pieces (I like to process mine in the food processor and freeze remaining)
    3 pounds ground beef
    1 large onion, chopped (about 1 cup)
    1 Tblsp Worcestershire sauce
    dash of salt
    1/4 tsp pepper

Directions

14 servings for 3 whole meals.

STEP ONE - MEAT LOAF MEAL: Mix all ingredients. Press half of the mixture in ungreased loaf pan. 9x5.3 inches. Cover and refrigerate up to 24 hours for the flavors to fully meld. (HOWEVER, I have cooked it right away and it is still delicious.) Bake meat loaf uncovered in 350 degree oven 1 1/2 hours. Top with catsup. 6 servings

STEP TWO - MAKING THE MEATBALLS: Heat oven to 400 degrees. Spoon remaining beef mixture into ungreased jelly roll pan. 15 1/2x10 1/2x1 inch; pat into oblong shape, about 10x6 inches. Cut oblong into 1-inch squares; separate squares. Bake uncovered 20 minutes. Divide squares between two 1-quart freezer containers. Cover and label; freeze up to 2 months.

STEP THREE - CREAMY MEATBALLS over BROWN RICE. 15 minutes before serving, heat 1 can (10 3/4 ounces) condensed cream of chicken soup and 1/4 cup milk over medium heat, stirring constantly; add 1 container frozen beef squares. Cover and simmer, stirring occasionally until squares are hot, about 10 minutes. Serve over brown rice. 4 servings.

STEP FOUR - RED SAUCE MEATBALLS. 15 minutes before serving, heat 1 can (10 3/4 ounces) condensed tomato soup, 2 tablespoons water and 1/8 teaspoon ground oregano over medium heat, stirring constantly; add 1 container frozen beef squares. Cover and simmer, stirring occasionally, until squares are hot, about 10 minutes. Serve over your choice of noodles. 4 servings.
