Avocado Omlete

Ingredients

    1 Large Avocado (Sliced)
    1 Large Tomato (Sliced)
    1 Cup Alfalfa Sprouts
    Plain Yogurt or Sour Cream (for garnish) - not included in recipe totals
    4 Tbsp Water
    1/4 Tsp Salt

Directions

Whip 2 eggs, 1/8 tsp salt and 2 tbsp water in a small bowl. Pour into a small pre-heated skillet and cook until the top is only slightly runny. Add half the avocado slices (keep 3 aside to put on top) and half of the tomato slices. Let them get warm then slide from pan onto a plate and garnish with the 3 avocado slices you set aside, half a cup of alfalfa sprouts and plain yogurt.
