Boca Burritos

Introduction

No cholesterol, low fat, high fiber in under 30 minutes! No cholesterol, low fat, high fiber in under 30 minutes!
Number of Servings: 4

Ingredients

    1 tsp extra virgin olive oil
    1/2 c. chopped onion
    1/2 c. chopped green pepper
    1/2 c. diced fresh tomato
    1 pouch Boca Meatless ground burger
    1-16 oz can fat free black beans
    2 tsp chili powder
    1 tbsp ground cumin
    1 c. water
    4 FlatOut light sundried tomato wraps
    4 leaves Bib Leaf lettuce
    4 tbsp salsa


Directions

In a large skillet , warm olive oil over medium heat. Add onion, bell pepper, and tomato. Cook until onion and pepper are tender. Add Boca meat and black beans, stir frequently to keep ingredients from sticking to pan. Add seasonings and stir to incorporate. Add water all at once. Simmer for 2-3 minutes. Plate ingredients on FlatOut wraps with lettuce and salsa. Add a slice of tomato to burrito, if desired. Goes well with fresh fruit.
