Apricot Chicken

Introduction

Sweet, pungent flavor gives this dish great appeal...very tasty and quick to pull together. Sweet, pungent flavor gives this dish great appeal...very tasty and quick to pull together.
Number of Servings: 5

Ingredients

    1 onion chopped
    3-4 Chicken Breast halves, thinly sliced
    1/4 cup Sugar Free Apricot Preserves
    1/2 cup White Cooking wine
    2 tbsp lemon juice (I used a splash of apple juice when I was out of lemon juice)
    1/4 tsp. cinnamon

Directions

1. Lightly spray a large skillet. Add the chopped onion. Saute for 5 minutes, turning often.
2. Add the chicken and brown on each side, about 5 minutes.
3. Add the preserves, wine, lemon juice, cinnamon, and salt and pepper to taste; stir and cover for 5 minutes.
