1/2 c. chickpea flour (besan)
1/2 c. white or whole wheat flour
1/2 tsp. baking powder
1 c. water (more if needed)
1/3 c. chopped scallions
1/2 c. chopped shrimp, scallops or other fish
2-3 Tbslp. chopped fresh herbs (parsley, dill, cilantro)
1 Tbslp. olive oil, or more as needed
Generously grease a non-stick frying pan with olive oil. Pour batter into pan and cook until edges are set (3 min.) flip and cook for an additional 2-3 minutes. Be careful not to overcook or your seafood will become rubbery!
