This can be altered in any way -- add mushrooms, more veggies to increase serving yield and decrease calories. Can also be made with chicken. The pesto has a lot of olive oil in it, so you need just enough oil to coat the pan and cook the onion.This and some grilled chicken feeds my husband and I both and then I still have a serving to take to lunch the next day! Ingredients

2 Servings of Ronzoni Smart Taste rotini pasta (or a whole wheat pasta)
2 oz. reduced fat feta
2 roma tomatoes, chopped
1 c. fresh spinach
1. tsp olive oil
1/2 cup basil pesto
2 tbsp. purple onion
Directions
1. Use a smidge of the olive oil to cook your pasta.
2. Once the pasta is cooked, drain, reserving a couple of tablespoons of water.
3. Heat the rest of the olive oil and cook the onion.
4. Add spinach and lightly sautee.
4. Add the pasta, tomatoes and basil pesto, stirring to coat. If the pasta looks dry, add some of that reserved pasta water.
5. Remove from heat and add the feta.
Makes 3 servings.
