Crustless Quiche

Ingredients

    1 medium onion-chopped
    4 cups fresh spinach
    1 Tbsp Country Crock spread (light)
    1 Tbsp minced garlic (3 cloves)
    3 eggs
    5 egg whites
    1 1/4 cup milk (1%)
    1 Tbsp toasted wheat germ
    3/4 cup shredded mozzarella cheese
    1/4 cup crumbled feta


Directions

Saute onions in Country Crock spread. When golden brown add garlic and spinach. cook on medium heat until spinach is wilted. Spray a pie plate with calorie free non-stick spray and sprinkle the wheat germ in the bottom. spread the onion/spinach mixture on the bottom of the pie plate. Next, sprinkle the mozzarella and feta cheese on top of spinach. In a bowl beat the eggs, egg whites and milk (add salt and pepper if you like) and pour egg mixture over the cheese/spinach. Bake at a 425* over for 40 minutes or until the quiche is browned on top and puffed up. Let set for at least 5 minutes before cutting. serves 4
