Turkey Meat Loaf

Submitted by: CRIMSCOUT

Introduction

This is a meat loaf option for those avoiding " red meat". My family likes it and I make it about once every two weeks. This is a meat loaf option for those avoiding " red meat". My family likes it and I make it about once every two weeks.

Ingredients

1 lb of lean ground turkey
    1 small onion, chopped fine
1 stalk of celery, chopped fine
    1/2 cup of bread crumbs
4 tbsp. of ground flax seed
    1 egg
2-3 tsps of worcestershire or soy sauce
    1 tsp poultry seasoning
    Jim Beam Mustard (optional)
    salt and pepper to taste

Directions

Mix all ingredients together in a bowl, and then form into a loaf shape on a metal sheet or in a loaf tin sprayed with cooking spray. Cook in a 375 degree preheated oven for 45-50 minutes or until cooking thermometer reaches 160 at the core. During the last 15 minutes of cooking, I like to use Jim Beam mustard as a glaze. Makes 6 servings
