Fast Vegetable Soup

Introduction

Number of Servings: 6

Ingredients

    3 Tb. olive oil
    1 medium onion
    1 carrot
    1 stalk celery
    2 cloves garlic
    6 cups water
    2 medium whole tomatoes, chopped
    1 cup broccoli, chopped
    1 cup cauliflower, (1" pieces)
    1 cup corn, kernels
    1 cup red kidney beans
    1 cup chopped kale
    1/2 cup Parsley

Directions

Heat 2 Tb. olive oil in a large pan and saute onion, carrot, celery, and garlic. Boil water.

Add water and remaining vegetables. Simmer 10 - 15 min. Add pepper to taste. Add one Tb. olive oil. Serve.

Makes 6 servings of about 2 cups each
