Great Potluck dish

Number of Servings: 8

Ingredients

    4 strips bacon
    1 large onion, chopped
    (1 cup celery, chopped)
    (1 green pepper, chopped)
    2 pounds fresh or frozen green beans. If using fresh, precook slightly
    1-16 oz can tomatoes, diced
    salt & pepper to taste
    2 oz cheddar cheese, grated

Directions

Fry bacon, remove. Saute onion in bacon fat. Add celery, green pepper, tomatoes, salt and pepper. Cook covered until tender. Place green beans in a casserole dish. Crumble bacon over top and pour over tomato mixture. Bake uncovered, for 1 hour at 350 °F. Sprinkle with grated cheese and bake 15 minutes longer.

Works OK in a crock pot, but will be saucier.
