Number of Servings: 48

Ingredients

1 20oz can of crushed pineapple in its own juice
    6 cups flour
    4 cups sugar
    2 teaspoons baking powder
    2 teaspoons baking soda
    2 teaspoons salt
    4 teaspoons cinnamon
    4 large eggs
    2 egg whites
    3/4 cup olive oil
    4 teaspoons vanilla extract
    4 cups shredded carrots
    1 cup applesauce, unsweetened

Directions

Heat the oven to 350 degrees. Drain the pineapple and reserve the juice. In a large bowl, whisk together the flour, sugar, baking soda, baking powder, salt and cinnamon. Make a well in the center of the mixture and drop in the eggs, egg whites, oil vanilla extract and reserved pineapple jiuce. Beat at medium speed until blended, about 1 1/2 minutes. With a spoon, stir in the crushed pineapple, shredded carrots and applesauce.

Then spoom batter into cupcake tins. Bake until toothpick stuck in center comes out clean, about 22-25 minutes. Remove from oven, let rest 2 minutes then remove from tin. Serve warm.

This recipe is a double recipe using less oil than the original. Suppose to make 48 cupcakes.
