Ingredients

2 large onion, chopped
4 cloves garlic, minced
3 cups vegetable broth
(2) 14-ounce can diced tomatoes (fire-roasted)
(2) 15 ounces fatfree refried beans
(2) 15 ounces black beans, cooked
2 cups frozen corn kernels
1/2 cup Western Style Vegetables
2 teaspoon cumin
3 teaspoon smoked paprika
1 teaspoon chipotle chili powder
2 teaspoon hot sauce
1 teaspoon Mexican oregano
salt and pepper, to taste
Directions
Spray a large, non-stick pot with cooking spray, and sauté the onion until it begins to brown. Add the garlic and cook for one more minute. Add all the remaining ingredients and cook until the flavors blend, 20-30 minutes.
Serving suggestion: Garnish with fresh tomato salsa and serve with baked tortilla chips and a large salad.

what are western style vegetables? - 5/26/12

I believe most grocery sell them in the frozen foods section pre-mixed. They usually include things like corn, peppers, etc.

Just made this tonight. I was missing a couple of ingredients (fresh garlic, hot sauce, paprika, Western Style vegetables), but I subsituted with garlic powder, a dash of cayenne pepper & cayenne pepper sauce and it turned out fantastic! A side of tortilla chips and sour cream went great with it! - 3/15/11
