Pan smeared seitan

Introduction

This tastes almost like stir fried lamb chunks and is full of protein to serve as an appetizer or on a pita sandwich or whole wheat roti with lettuce, tomato, tahini and the whole 9 yards of a Greek lamb Kabob sandwich! Ingredients

    Olive Oil, 1 1tsp - feel free to use the spray.
    Onions, raw, .5 small, chopped fine.
    Westsoy Seitan (2.5 serving package), 1 serving - rinse well and let soak for 2 minutes in HOT water.

    A pinch of :
    coriander powder, .3 tsp
    *Cumin seed, roasted and powdered .3 tsp ( I usually keep them handy already prepared)
    *Fennel seed, .2 tsp
    Garlic powder, .2 tsp
    Chili powder, .2 tsp
    Paprika, .25 tsp
    Turmeric, ground, .2 tsp

Directions

Heat oil in a non stick sauce pan and drop in the finely chopped onions. Brown them well. Add fennel seeds and stir fry till fragrant.

Mix all the seasoning spices well with rinsed, ( to remove the smell and some of the salt) soaked and dried seitan which are hungry for spices and drop in to the pan, stir well.Cook till heated .

I like to eat this stuffed inside Kawan whole wheat roti,, with cubed cucumbers in tahini sauce or 1/2 tsp of mayonnaise when I am out of the sauce, topped by 3 slices of tomato and 1/2 a cup of romaine lettuce, sprayed with Kens light accents balsamic salad dressing. So Yum! With the fennel seeds, the seitan tastes just like lamb chunks!!

Serves 1 for snack as is or in a pita for lunch sandwich.
