Introduction

This is the recipe from Robert Rodriguez in the film Once Upon a Time in Mexico. I did not add the splash of fine tequilla but I recommend it, I also recommend using lime instead of lemon and using only one habanero as it gets VERY spice with three. I didn't use any of the seeds. Ingredients

    For the paste:
    5 tbsp acchiato (annato) seeds
    2tsp cumin
    1 tbsp pepper, black
    8 allspice seeds (1 tbsp)
    1/2 tsp cloves
    in
    1/2 cup orange juice
    1/2 cup white vinegar
    with 2-3 diced habanero no seeds

    5lbs pork butt, cubed into 1 inch pieces

    2 tbsp salt
    8 cloves garlic, crushed
    juice of 5 lemons
    (splash of fine tequilla)

Directions

Prepare the paste by grinding the spices finely (I used a coffee grinder). Toss the pork butt in the paste and add the lemons until it becomes a sauce. You can also just seal everything in a large zip lock bag (or a couple bags) and just coat it thoroughly. Put the meat and sauce in a large glass pan and sprinkle the salt and garlic on top before sealing with tin foil (or banana leaves!)

Cook for four hours at 325F. The meat will fall apart and is delicious over rice.
